Greek Olives Recipes - Chickpeas salad with olives
Greek salad with chickpeas and olives
· 1 1/2 cup boiled chickpeas
· 2 tomatoes, cut in cubes
· 1 big cucumber, cut in cubes
· 10-15 Kalamata olives sliced
· 1 large onion, finely chopped
· 2 tbsp. parsley finely chopped
For the sauce
· 1 tbsp. Tahini sauce
· 1 tbsp. Greek extra virgin olive oil
· 3 tbsp. Lemon juice
· Salt & pepper
Place all ingredients in a large bowl.
Mix all sauce ingredients, until smooth.
Pour sauce over salad, and mix well using two spoons.
Serve in smaller bowls and enjoy!
